Smoked Salmon Avocado Toast

Individual baguette slices, toasted and topped with mashed avocado, scrambled eggs, dill, smoked salmon and nuggets of warm cream cheese.  

Prep Time:  5 minutes |  Cook Time:  5 minutes |  Total Time:  10  minutes |  Servings:  3 (3 slices per serving)

Ingredients:

  • 6  Goldhen  Large Eggs
  • 1 tablespoon chopped dill
  • 2 tablespoons  Happy Farms  Cream Cheese, cut into small chunks
  • 3 ounces  Specially Selected  Cold Smoked Salmon, roughly chopped
  • 2 tablespoons diced red onion
  • ground  Stonemill  Sea Salt Grinder, to taste
  • ground  Stonemill  Black Pepper Grinder, to taste
  • 1 avocado, mashed
  • 6 ounces  Specially Selected  French Baguette, sliced and toasted

Directions:

  1. Preheat a medium nonstick skillet over medium heat for 1 minute.  
  2. In a medium bowl, whisk together eggs and dill.
  3. Add eggs to skillet and cook, stirring frequently, until no longer runny. Stir in cream cheese, salmon and red onion. Season to taste with salt and pepper.
  4. Spread avocado on toast. Season to taste with salt and pepper.  
  5. Top toast with egg mixture. Serve immediately.
