Chili Con Carne

What's fall without a hearty, comforting and classic chili?!

Prep Time:  15 minutes   |    Cook Time:  2 hours   |    Total Time:  2 hours, 15  minutes   |    Servings:  6

Ingredients:

  • 2 tablespoons  Carlini  Vegetable Oil, divided  
  • 2 16-ounce packages   Simply Nature  Organic Grass Fed Ground Beef
  • 1 yellow onion, diced
  • 1 red pepper, diced
  • 3 large jalapenos, seeded and diced
  • 8 cloves garlic, minced
  • 3 tablespoons  Stonemill  Chili Powder
  • 4 tablespoons  Stonemill  Cumin
  • 1 teaspoon  Stonemill  Oregano
  • ground  Stonemill  Sea Salt Grinder, to taste
  • 28 ounces  Simply Nature  Organic Diced Tomatoes, lightly drained
  • 15 ounces  Simply Nature  Organic Pinto Beans
  • 5 cups  Simply Nature  Organic Beef Broth
  • 4 ounces  Happy Harvest  Tomato Paste
  • 1/2 cup chopped cilantro
  • 2 limes, cut into wedges

Directions:

  1. In a large pot, heat 1 tablespoon vegetable oil over medium-high heat. Add beef and cook until cooked through. Drain fat and reserve.
  2. Add remaining tablespoon of vegetable oil to pot. Add onion, red pepper, jalapenos; sauté for 5 minutes. Add garlic, chili powder, cumin, oregano and salt. Sauté for another 5 minutes. Add tomatoes, beans, broth and tomato paste. Bring chili to a boil, reduce heat to low and simmer for 1 hour and 50 minutes, or until chili thickness is reached.
  3. Stir in cilantro and serve with lime wedges.  

Tip:  If chili becomes too thick, add more broth to reach desired consistency.
