Cauliflower "Rice" with Caramelized Onions and Roasted Garlic
Prep Time: 5 minutes | Cook Time: 10 minutes | Total Time: 15 minutes | Servings: 4
Ingredients:
- 1 head cauliflower, stemmed, coarsely chopped
- Carlini Canola Cooking Spray
- 1 head garlic, roasted
- 1 onion, thinly sliced and caramelized
- 4 tablespoons chopped parsley, divided
- Stonemill Ground Sea Salt Grinder, to taste
- Stonemill Ground Peppercorn Grinder, to taste
Directions:
- In a food processor, pulse cauliflower until it resembles course crumbs. Place cauliflower in a kitchen towel and squeeze out any excess liquid. Reserve.
- Coat a medium skillet with cooking spray and place over medium-high heat. Add cauliflower, garlic, onions and 2 tablespoons parsley. Mix until ingredients are well combined. Season to taste with salt and pepper.
- Cook cauliflower for 10 minutes. Garnish with remaining 2 tablespoons parsley.
