Summer Grilled Potatoes and Vegetables
A great side dish that can be cooked on the grill to accompany any summer BBQ or camping trip!
Prep Time: 20 minutes | Cook Time: 20 minutes | Total Time: 40 minutes | Servings: 8
Ingredients:
- 3 pounds golden potatoes, quartered
- 1 red pepper, diced
- 2 zucchini, halved and sliced
- 2 yellow squash, halved and sliced
- 2 2.2-ounce packages Chef’s Cupboard Onion Soup Mix
- ¾ cup Carlini Extra Virgin Olive Oil
Directions:
- Preheat grill to medium-high heat.
- Mix all ingredients together and wrap tightly in a foil packet.
- Place on grill or campfire and rotate every 5 minutes for 20 minutes, or until potatoes are soft.
TIP: Be careful when opening foil; steam escaping may cause burns.
