Patriotic Poke Cake
Cool and creamy, perfect for warm summer days!
Prep Time: 40 minutes (plus 3 hours to chill) | Cook Time: 35 minutes | Total Time: 1 hour, 15 minutes (plus 3 hours to chill) | Servings: 12-16
Ingredients:
- 1 box Baker's Corner Patriotic Confetti Cake Mix* OR 2 L'oven Fresh All Butter Loaf Cakes*
- 1 1/4 cups water
- 4 Goldhen Large Egg Whites
- 1/3 cup Carlini Vegetable Oil
- 1 box Baker's Corner Strawberry Gelatin Mix
- 1 cup boiling water
- 1/2 cup cold water
- 1 box Baker's Corner Instant Vanilla Pudding Mix
- 1/3 cup Friendly Farms 2% Milk
- 1 container Friendly Farms Whipped Topping, thawed
- 1 cup strawberries, sliced
- 1 cup blueberries

Directions:
- Preheat oven to 350°. Prepare confetti cake mix according to package instructions using a 13x9-inch pan and let cool completely. Or, slice 2 loaf cakes in half lengthwise and lay in a large cake pan, sliced side up.
- Let cake cool completely, then use a fork to pierce holes evenly across surface of cake.
- Combine strawberry gelatin and boiling water until dissolved. Add cold water and mix. Pour gelatin mixture evenly, covering the top of the cake. Refrigerate at least 3 hours before serving cake.
- Combine pudding mix and milk in a large bowl. Fold in whipped topping. Spread evenly over top of cake. Garnish cake with fresh berries. Enjoy immediately or refrigerate until ready to serve.
