Patriotic Poke Cake

Cool and creamy, perfect for warm summer days!

Prep Time:  40 minutes (plus 3 hours to chill)   |    Cook Time:  35 minutes   |    Total Time:  1 hour, 15 minutes (plus 3 hours to chill)   |    Servings:  12-16

Ingredients:

  • 1 box  Baker's Corner  Patriotic Confetti Cake Mix*  OR 2  L'oven Fresh  All Butter Loaf Cakes*
  • 1 1/4 cups water
  • 4  Goldhen  Large Egg Whites
  • 1/3 cup  Carlini  Vegetable Oil
  • 1 box  Baker's Corner  Strawberry Gelatin Mix
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 box  Baker's Corner  Instant Vanilla Pudding Mix
  • 1/3 cup  Friendly Farms  2% Milk
  • 1 container  Friendly Farms  Whipped Topping, thawed
  • 1 cup strawberries, sliced
  • 1 cup blueberries

Directions:

  1. Preheat oven to 350°.  Prepare confetti cake mix according to package instructions using a 13x9-inch pan and let cool completely. Or, slice 2 loaf cakes in half lengthwise and lay in a large cake pan, sliced side up.  
  2. Let cake cool completely, then use a fork to pierce holes evenly across surface of cake.
  3. Combine strawberry gelatin and boiling water until dissolved.  Add cold water and mix. Pour gelatin mixture evenly, covering the top of the cake.  Refrigerate at least 3 hours before serving cake.  
  4. Combine pudding mix and milk in a large bowl.  Fold in whipped topping.  Spread evenly over top of cake.  Garnish cake with fresh berries.  Enjoy immediately or refrigerate until ready to serve.
