Coffee Chocolate Chip Brownie Cookie

Combine the ingredients of butter, eggs, Irish cream, coffee, water, brownie mix of choice and flour in a medium mixing bowl. Use an electric mixer or a hand mixer and blend on low speed until you have a pliable dough.
Next, break chocolate sandwich cookies into pieces to create crumbles that you will add to your dough. You can achieve this texture by putting 10 cookie sandwiches into a bag and using a rolling pin to crush them. Toss in sweet chocolate morsels into the mix while being cautious of overmixing.
Once your chunky, chocolatey cookie dough is ready, scoop it out into sections and place them on a prepared baking sheet. Be sure to space the cookie dough balls two inches apart. Bake the rich chocolate coffee cookies for 12 minutes, then remove them and allow them to rest and cool for 5 minutes.

- ¼ cup Countryside Creamery Unsalted Butter, melted
- 3 tablespoons water
- 1 tablespoon O'Donnells Irish Cream
- 2 Goldhen Large Eggs, beaten
- 1 ½ teaspoons Beaumont Instant Regular Coffee
- 18.5 ounces Baker's Corner Fudge Brownie Mix
- ½ cup Baker's Corner All Purpose Flour
- 10 Benton's Double Filled Chocolate Sandwich Cookies, crumbled
- ½ cup Baker's Corner Real Semi-Sweet Chocolate Morsels
Directions:
- Preheat oven to 350°. Line 2 baking sheets with parchment paper.
- Using an electric mixer, combine butter, water, Irish cream, eggs, coffee, brownie mix and flour in a medium bowl. Blend on low speed until just blended together.
- Fold in sandwich cookies and chocolate morsels. Do not over mix.
- Scoop dough by tablespoons, spaced 2 inches apart, onto prepared baking sheets. Bake for 12 minutes. Let cool 5 minutes on baking sheet, then transfer to wire racks.
Tip: Serve with vanilla ice cream or make into an ice cream sandwich cookie.
