Mom's New Favorite Brie and Berry Bake!

Ingredients:
- 1 cup Wicked Grove Hard Cider
- 2 cups Baker's Corner Brown Sugar, divided
- 3 large pears, diced
- 3 pints blackberries
- ¼ cup Baker's Corner Granulated Sugar
- ¼ teaspoon Stonemill Iodized Salt
- ½ teaspoon Nature's Nectar Lemon Juice
- ½ cup Baker's Corner All Purpose Flour
- 2 tablespoons Countryside Creamery Butter
- Carlini Cooking Spray
- 15 ounces Bake House Creations Pie Crust, room temperature
- 8 ounces Happy Farms Preferred Brie Cheese Round
Directions:
- Preheat oven to 350º.
- In a saucepan, over medium-high heat, combine cider and 1½ cups brown sugar, stir well. When mixture begins to boil, add pears and reduce heat. Simmer for 5 minutes, remove from heat and drain. Reserve.
- In a medium bowl, roughly smash blackberries. Stir in sugar, salt and lemon juice. In another medium bowl, combine remaining ½ cup brown sugar and flour. Cut butter into mixture, only small chunks of butter should remain.
- Coat an 8x8-inch baking dish with cooking spray. Unroll pie crust and place inside, shaping it to the dish. Slice brie into 16 pieces. Line bottom of pie crust with brie until completely covered. Top with pears then blackberry mixture. Evenly cover with flour mixture.
- Bake for 40 minutes. Cover with aluminum foil and bake for an additional 20 minutes. Remove from oven and allow to cool for 5-10 minutes before serving.
