Holiday Cranberry Mojito

Prep Time: 15 minutes   |    Cook Time: 5 minutes   |    Total Time: 20 minutes   |    Servings: 1 Mojito

Ingredients:

  • 1 cup fresh cranberries, plus 5 for muddling
  • 1 tablespoon water
  • 1 lime, quartered
  • 10 mint leaves
  • 1/2 ounce light rum
  • 3/4 cup  Summit  Citrus Twist Lemon Lime Soda
  • 1/8 cup crushed ice

Directions:

  1. In a small saucepan over medium-high heat, combine 1 cup fresh cranberries and 1 tablespoon water. Cook until cranberries burst, about 5 minutes.
  2. Press cooked cranberries through a mesh strainer to make a cranberry puree; discard solids, set aside.
  3. In a 12-ounce glass, squeeze the juice from 2 lime wedges. Add the squeezed wedges, mint leaves and remaining cranberries. Muddle to combine ingredients.
  4. Add rum, 1 tablespoon cranberry puree, soda and crushed ice. Stir until well combined.
