Ingredients:
Skewers
- 3 limes, zested and juiced
- 1 orange, zested and juiced
- 5 cloves garlic, minced
- 1 teaspoon Stonemill Iodized Salt
- 1 1/4 teaspoons Stonemill Ground Black Pepper
- 1/4 cup chopped cilantro
- 2 12-ounce packages Fremont Fish Market Jumbo Easy Peel Raw Shrimp, thawed and peeled
Dip
- 1 avocado
- 2 tablespoons lime juice
- 1 tablespoon orange juice
- 1/4 teaspoon Stonemill Iodized Salt
- 1/4 cup chopped cilantro
- 1 clove garlic
- 2 tablespoons Carlini Vegetable Oil
- Carlini Canola Cooking Spray
Directions
- For the skewers: Combine all ingredients in a resealable bag and let marinate for 30 minutes.
- For the dip: Combine all ingredients in a food processor and pulse until smooth. Transfer to a small bowl and reserve.
- Pierce 4-5 shrimp on each skewer.
- Preheat Crofton Rectangular Cast Iron Skinny Griddle over medium-high heat. Coat with cooking spray.
- Cook the skewers for 2-3 minutes on each side or until done
Tip: These can easily be turned into a quick taco dinner. Skip the skewers and cook as instructed. Add the shrimp to a warm corn tortilla and dress up some cabbage with the dip for a slaw.
