Crab Meat Avocado

Ingredients:
- 2 cloves garlic, minced
- 1 teaspoon Burman’s Dijon Mustard
- 1 lemon, zested and juiced
- ½ teaspoon Stonemill Iodized Salt
- ½ teaspoon Stonemill Ground Black Pepper
- ½ cup Carlini Extra Virgin Olive Oil
- ½ red pepper, diced
- ½ yellow pepper, diced
- ½ red onion, diced
- 2 tablespoons chopped fresh parsley
- 2 green onions, sliced
- 2 8-ounce packages Fremont Fish Market Flake Style Imitation Crab Meat
- 3 avocados, halved and pitted
Directions:
- In a medium bowl, whisk together garlic, mustard, lemon zest, lemon juice, salt and pepper.
- Slowly drizzle in oil until emulsified.
- Add remaining ingredients except avocado and toss to combine.
- Divide evenly among avocado halves and serve.
