Summer Spinach Salad

Prep Time:  10 minutes |  Total Time:  10  minutes |  Servings:  6

Ingredients:

  • 1 lemon, zested and juiced
  • 1 orange, zested and supremed, divided
  • 1/2 cup  Specially  Selected  House Italian Vinaigrette Dressing;
  • 5 ounces  Simply  Nature  Organic Baby Spinach
  • 1 1/2 cups cooked  Simply  Nature  Organic Quinoa
  • 1/2 cup pitted, halved cherries
  • 1 cup quartered strawberries
  • 1/2 cup blueberries;
  • 1/3 cup diced red onions
  • 1/2 cup  Southern  Grove  Chopped Pecans, toasted
  • 2 ounces  Emporium  Selection  Original Goat Cheese Crumbles

Directions:

  1. In a large bowl whisk together the lemon zest, lemon juice, orange zest and vinaigrette.
  2. Add remaining ingredients and toss together. Allow to sit for 5 minutes before serving.
